Whisky enthusiasts will have come across the acronym "STR", which stands for "SHAVE, TOAST, RE-CHAR". It's a special process that has been invented in recent years to treat wine barrels.


Dr. Jim Swan has become a legend for his outstanding contributions to the field of whisky making. His STR process revolutionized whisky making by transforming red wine casks in a unique way, and each step in the STR process has its own unique significance and contribution, so let's take a look at it.

First, the S stands for SHAVE, a step in which the surface of a red wine barrel is planned to remove residual wine sediment and tanks. The purpose of this is to leave the surface of the barrel clean and ready for the subsequent steps. Next, T is for TOAST, where the planed barrels are toasted, which activates the complex compounds within the oak and releases unique aromas and flavors. Toasting also leads to changes in the fiber structure of the oak, allowing the wine to interact more closely and effectively with the oak. The final R stands for RECHARRED. toasted barrels are charred again over an open fire, leaving the inside of the barrels glowing like a light and the furrowed charcoal marks visible. The STR process seems like a perfect way to refurbish wine barrels. It doesn't give you that strong, woody vanilla flavor of new American oak barrels, nor does it strip the wine of its tannins. Instead, they lock in the fruity flavors of the red wine while providing a more balanced, woody aroma, which is the ideal result to make a single malt whisky.

Goalong Distillery's STR red wine barrels are Bordeaux barrels from the Sonoma region of the United States. We spoke with a professional barrel maker to select the STR process treatment that would be appropriate for our spirit, such as the level of toasting and carbonation, and so on. This ensures that we can achieve the barrel-aging results we want for our whisky.

The STR Red Cask has been aged for 1 year and 10 months in the Four Seasons Cellar at Goalong Distillery as an opening cask, witnessing the passage of time and the transformation of the whisky. At the beginning of the cask aging, the distillers were not satisfied with the STR Red Cask, saying that the spirit did not have enough body and the aroma was not rich enough. However, after the long winter and the warmth of spring, the STR Red Cask has a newfound charisma. The layers of the wine are gradually enriched, the flavors are integrated, and the wine becomes the most stunning of all. Like a butterfly emerging from its cocoon, the wine reveals itself to be incredibly beautiful. It's this wonderful barrel aging reaction that gives Goalong STR Red Cask Whisky its unique flavor and complexity and layers of flavors that have gained it a large number of fans.

STR Cask Tasting Notes

Color: Bronze

Nose: tropical fruits with rich spices, cinnamon and toffee.

Taste: In the mouth, there are flavors of berries and grapes with hints of caramel. On the palate, there are hints of honey and fudge with a balanced and elegant finish. The wine barrels provide an elegant, fresh, and crisp complement to the whisky's maturation. The focus is on red fruit flavors such as cranberry, cherry, strawberry, and apple. Some of the overpowering flavors of the new spirit are neutralized by the STR casks, adding liveliness and freshness, with room for improvement in balance and layering.
