I had one of those moments the other night as I was watching an old episode of Emeril Lagasse. He was throwing spices into his gumbo while yelling, “BAM!” I’ll never forget what he said next.

Emeril was explaining why you leave the lid off the gumbo pot early in the cooking process. He said, “Evaporation leads to concentration.”
As it cooks down steam releases and makes a thicker, more rich gumbo. The concentration of flavors wouldn’t be as profound if the gumbo couldn’t release the excess liquid.
