When change occurs, one of the first places we notice is in how we eat. Television became popular in the 1950s. Families left the dinner table for TV trays and pre-packaged TV dinners. How we ate was now different. For good or bad, there was no going back.

Consumer behavior at restaurants has also shifted during the pandemic. While online delivery existed, it lacked a compelling reason for rapid adoption. That is until restaurants had to limit capacity or even close altogether. Customers still wanted restaurant food even if they had to forego the dining experience. So, restaurants grappled with a novel question: what if customers can't return? Out of this was born the delivery-only virtual restaurant or cloud kitchen. Some of today’s leading casual dining companies have launched their own virtual brands to service customers and mitigate risk. There is no going back.
