7 Biscuits!
It’s going on one year since I arrived in North Carolina and folks first question is “How do you like it?” I tell them I’m glad to be back in the South because of the food! Every Saturday morning, my wife and I hit our favorite spot for chicken & waffles, shrimp & grits, and pancakes. This morning I decided that I would put my culinary skills to work and fix us some breakfast. I asked my wife if we had any biscuits. She said, “Corey, there is plenty of food!” So, I sprinted into the kitchen and “come to find out” (southern phrase).
There were only 7 Biscuits in this house!
My wife and I have a different perspective when it comes to food. I think it is because of the way we grew up. My mom was one of twelve kids growing up in rural East Texas where they always had plenty of food for the twelve kids, but also food for the kids in the neighborhood who may have invited themselves to get a warm plate of collard greens, pork chops or pickled pigs feet!
Of course, to feed a clan of that size, you had to cook a lot of food and my mom adopted the practice of cooking plenty of food for her family. One of my cousins summed it up years later:
“We may not have any lights, but we will always have food and toilet tissue!”
I don’t know how the toilet tissue plays into it, but I digress.
My wife’s family is from the Mississippi Delta. You would think they would have a similar philosophy about food, but on more than one occasion, I have been shocked by what they consider more than enough. Early in our marriage, I witnessed this first hand when we visited her uncle and he summoned us down for breakfast. After he blessed the food, I opened my eyes only to see one boiled egg, a half slice of toast and one sausage link. Immediately, my head was on a swivel surveying the landscape and looking at the stove to see if this would be it and planning how I would slip away to McDonald's.
We laugh about this now, but it was real and I had an irrational flashback of that encounter this morning as I stood there staring at those 7 Biscuits!
However, my negative thoughts quickly transitioned to how grateful I was to have these 7 biscuits to feed my family of three. Maybe my wife's uncle had it right, each day that you’re healthy and able to partake in a meal is more than enough regardless of the portion sizes on your plate.
You see, I’ve never been hungry and there are literally millions of folks who truly don’t have enough to eat every day.
I encourage you to keep things in perspective and turn your “7 Biscuit Moment” to a “More Than Enough Moment!”
