5 simple nutritious dinner ideas

I often get asked for dinner ideas and I know it can be frustrating trying to come up with new ideas that your family will eat and are healthy and nutritious. I wanted to share with you some of my favourite quick and easy options. I hate spending hours in the kitchen so most of these take less than 30 mins but are packed with flavour and nutrients.

Stir-fries

One of the quickest and healthiest options. You can pack them with your favourite vegetables. They are a great way to get protein and at least 3 of your 5 (or 7) a day. These can be a low carb option bulked up with veg or served with a side of rice or noodles

Curries

Spices are so full of nutrients and healing properties. Add chilli, garlic and ginger for an added boost. Just as tasty made with veg as it is with prawns, fish, chicken and lamb. Made from scratch they can be so healthy. I love a coconut based one for added healthy fats.

Tray bakes

A hassle-free dinner. Just chop, toss in some oil and chuck on a baking tray and in the oven while you relax with a herbal tea. Plus the bonus of less washing up! I like to marinade some chicken or fish with some herbs and spices, wrap in parchment paper and add to a tray with sweet potato, courgettes, cherry tomatoes, onions and garlic.

Stews and casseroles

Your slow cooker is your friend! Just chop some meat and veg, saute some onions, garlic and peppers, seal the meat and add to the slow cooker with some chopped tomatoes or stock and some more vegetables and let it cook away all day. So easy to make and the meat melts in your mouth. It’s also great for veggie dishes with lentils and beans.

Salads

There are so many good options for a nice filling salad. It doesn’t have to be boring! All you need is some protein, leaves and salad vegetables. Add brown rice, avocado, lentils or grated carrot to help bulk it up and a dressing made with balsamic vinegar, lemon juice and olive oil.

My favourite are definitely stir fries - lots of crunchy veg topped with prawns. I tend to serve with quinoa
