3 Things That Butter Taught Me

My mom loves butter and I had never understood why.
Everything she has ever made has been from scratch. I can't think of anything that she has made that I didn't like. That's a lye. As a kid there were plenty of times that my mom made something that I didn't like. She may have made pancakes but I can't recall when she did.
I've now been making weekend pancakes for the last 20 years.
That's a long time, so you think that I'd have it perfected. The problem is that I haven't been continuously improving in trying new things.

To be totally up-front for the first 5 years it was really French Toast.
To this day, French Toast is one of my favorite foods. Unfortunately, when you start cooking for other people (a.k.a. our kids) you have to take their wishes into consideration. And, guess what, they didn't like French Toast. Dang. We decided to try pancakes and started with pre-made pancake mix. It was simple and straight forward. All you have to do is add water and put the badder on a hot griddle. Even I couldn't screw that up. And guess what, everyone liked it.
The next 12 years were pre-made pancake mix.
It really didn't seem bad at the time. We had chocolate chips, butterscotch chips, fresh fruit, frozen fruit and cinnamon. Lots. of. cinnamon. Looking back on it, these things were hiding the taste of plastic pancakes. I say plastic because of the less than natural vegetable oil that I used in said pancakes.
Then I found butter.
Actually, our youngest son Colin decided to make pancakes one morning and he didn't use my recipe. He googled one and it included melted butter, not vegetable oil. He had some leftover batter to I asked if I could have it. He said, "sure". I placed that golden flapjack on the griddle and my life was changed. It was great.
What butter taught me.
Butter taught me 3 things that day.
- Never stop trying new things. You never know how it can change your world.
- Natural foods have will always be better for you and your tastebuds.
- Always listen to your mother.
