2017 has seen us looking for foods that are not only healthier and more environmentally friendly, but that are also, particularly for millennials and Generation Z, instagrammable! And they’ve been spoiled in that sense! From Rainbow Bagels and ‘Freakshakes’ to desserts that look like main courses and the rise of healthy restaurants, the 2017 predictions have proved to be correct.
Functional Mushrooms
Traditionally used in dietary supplements as an ingredient to promote wellness, functional mushrooms are set to become one of the biggest trends of 2018, popping up everywhere from your morning coffee to your shampoo!
Plant-Based Alternatives
The under 35s of today are a lot more focused on health and the environment when it comes to their diets, so it’s not surprising that a rise in meat alternatives and meals that are as nutritious as possible are predicted for the coming year! Especially after actor and environment activist Leonardo DiCaprio invested in the startup Beyond Meat, catering for vegetarian and vegan diets. Be set to expect vegetarian burgers that bleed like meat, and fish-free sushi!
The Fall of Food Waste
Another aspect in the food industry that the under 35s are becoming more conscious about is to do with the amount of food that goes to waste. Did you know that at Christmas, 100,000 turkeys go to waste in Scotland alone!? Expect to see more recipes and menus that focus on using as much of the ingredients as possible!

Fusion Mash-Ups
It seems in recent years new food fusion products are certain to appear, from the cronut to fruit sushi and burgers with ramen noodle buns, and 2018 looks set to be no different!
Presenting the Sushi Croissant (otherwise known as the ‘croissushi’)!
Debuting at Mr Holmes Bakehouse in Los Angeles earlier this year, the croissushi looks set to catch on and could only be a matter of time before your local bakery is stocking them!
Another fusion mash-up set to boom in 2018 is the spaghetti doughnut!
From bolognese to mac & cheese, the spaghetti doughnut is a trend from Pop Pasta in New York that has gained momentum. And now there are recipe videos online of people creating their own, it’s bound to become a big trend of 2018 beyond the empire state!
