Thanks Sara Bean for asking us to contribute to this article. It is something very close to my heart. How about this for a shocking reality check! The World Food Programme estimates that food accounts for 13.7 billion tons of global CO2e every year. At the same time one third of the food produced globally is wasted. Let me put that in perspective! WFP say that if the amount of food wasted around the world every year were a country, it would be the?third-largest producer of carbon dioxide?in the world after the USA and China. And, all the food?produced but never eaten would be sufficient to feed?two billion people. That's more than twice the number of undernourished people across the globe. Here in the UK, 9.5 million tonnes of all food produced is spoiled or wasted every year. A large part of this is avoidable waste – and yet, worse still, millions of people in the UK are struggling to afford to eat right now !! This can't be right and we all have a role to play in sorting this !!! It is great to work for an organisation that is putting the reduction of food waste at the forefront of our overall food sustainability strategy. Our partnerships with organisations such as Winnow and Olio ? With sustainability in focus, some hotels are rethinking how to serve the first meal of the day to reduce food waste and delight guests with innovative approaches. A recent visit to the Meliá Sol Arona in Tenerife exposed the stark reality of food wastage at buffet services. Massive amounts of untouched, fresh food were discarded, a scene all too common in hotels worldwide. ??? The UN Environment Programme’s 2024 Food Waste Index Report highlights that over 1 billion tonnes of food were wasted globally in 2022, with the hospitality sector being a significant contributor. But change is on the horizon. ?? Hotels are now experimenting with creative solutions, from scrapping buffets post-COVID to introducing smaller plates and live cooking stations, as championed by Michelin-starred chef Massimo Bottura. His approach not only enhances the guest experience but also curbs food surplus. ?? The shift towards more sustainable practices is not just necessary; it's a moral imperative for the industry. As we move forward, the role of AI in tracking and reducing waste is also becoming pivotal, with trials showing promising results in cutting down food wastage by up to 22%. ??
