I was hosting a webinar last week. One attendee shared a story where they were looking at their food costs P&L and all of sudden said “why is our juice budget at this one facility so out of whack?”
It turned out they had not turned on the “thin” version of one flavor of beverage - so they were just buying and serving the mildly thick (more expensive) beverage to everybody, at a great expense to the facility. All just because nobody had checked the box on their order guide to allow them to order the thin beverage.
As crazy as that sounds, that's what is going on all the time. You have understaffed teams running around doing all these things and mistakes are going to happen when running too many SKUs.
When you have a system that simplifies and makes it easier, and the thickening process is the same for everything, and it works with every drink and food, you begin to see efficiency. You begin to see people drinking more. The cost comes down.
