Another tag watch from dietary: Hot Beverage Temperatures The tags being used for this: F804:?Nutritive Value/Appear, Palatable/Prefer Temp F689:?Free of Accident Hazards/Supervision/Devices ? Surveyors are checking the temperatures of hot beverages to see if they are hot enough to cause burns and scalds for residents. On top of that we know we are also juggling this with the palatability of the hot beverage. There is no specific temperature in regulations that says what the beverage must be. Most of the nationwide network of CDMs, RDNs, and NDTRs I have spoken with agree that 140°F seems to be the best temperature for both sides of this challenge. It has also been agreed that having a policy and log on hand prevents this from becoming a tag. Here is a sample policy you can use for your facility.
