Corked wine describes wine tainted with the chemical compound TCA (2, 4, 6- trichloroanisole). There are countless people buying wine daily, but what do they do with all of it? They definitely do not drink it all in one session; they store it. But storing wine is more complex than leaving it on the counter and calling it a day. Wine needs to be appropriately stored, depending on the type of wine and who you are as a drinker.? ? Many factors come into play when storing wine:? 1. Temperature: Maintain stable temperature around 55°F? 2. Humidity: 50-80%? 3. Light Exposure: Store in cool and dark areas? 4. Position: Lay the bottle flat on its side to reduce movement and keep the cork hydrated? 5. Odors: Wine "breathes" through its cork, and any off-odors within the area can get into the bottle over time, ruining the flavor and aroma.? ? Does your wine taste sour? Don’t drink it. Once you open a bottle of wine, it comes into contact with oxygen and the resultant reaction turns your wine into vinegar. That’s why, you might have heard someone say that you should finish your bottle of wine in one go. The idea isn’t to get you drunk but to ensure that your wine doesn’t go to waste. Also, a sour taste isn’t the only characteristic of a wine god bad. Watch out for these signs too: 1?? Does your wine look dull and cloudier than it did when you opened the bottle? 2?? If it is a red wine, has it turned brownish in colour? 3?? Does it have a sharp and sour smell, like a paint thinner or nail paint remover? 4?? Has it developed bubbles? Brace yourselves for our final Whisky Sponge bottling! When it came to choosing the liquid for our very last edition of Whisky Sponge, firstly, it had to be an excellent dram (that's a given), but we also wanted it to be something a bit different, something special and something we had a strong, collaborative role in creating... So, we started work on this 7-year-old Ardnamurchan last year when we selected eight octaves: four from 2017 and four from 2016. These were a mix of peated and unpeated, 1st fill and 2nd fill, that we combined in a refill sherry butt for around six months. The outcome: high quality, different, collaborative, forward facing and fun! You can expect a nose that hits you with tangy sherry, walnut wine, and a splash of balsamic vinegar, all wrapped in hessian and smoky bacon. Underneath, layers of rich, peppery peat collide with fruit jams and wood spice. The palate is bold and peaty, with savoury notes of cured meats, rancio and fruit chutney. The finish is long, smoky, meaty, and peaty with those tangy sherry and balsamic notes hanging around.
