Peruvian corn has a long history, as it has been grown since 1200 BC at least. Common in Peru, purple corn is used in chicha morada, a drink made by boiling ground purple corn kernels with pineapple, cinnamon, clove, and sugar, and in mazamorra, a type of pudding Chulpe corn, for instance, is a type of yellow corn that is often consumed toasted with salt. Another common variety is Choclo corn, which has large, steamed kernels that are often served as a side dish. And then there’s Cancha corn, which is roasted and eaten as a snack. Garlic Mustard Pesto recipe From Ryan Ralston, chef and general manager at Bread & Roses in Hyannis Ingredients: 2 cups fresh, and boiled garlic mustard leaves, or 1 cup frozen garlic mustard puree, thawed 2 cups fresh basil 1 cup sunflower seeds 2 to 3 cloves garlic 1 cup olive oil 2 tsp kosher salt 1 teaspoon black pepper, freshly ground Pour 2 cups of boiling water over 1 cup sunflower seeds. Let soak for 30 minutes, and drain well. Combine all ingredients except olive oil in a food processor and blend on high for 60 seconds. While the food processor is running, slowly drizzle the olive oil until fully combined. Season to taste. Salmon with Roasted Vegetables & Cauliflower Mash What you need: 6 oz salmon fillet 1 cup cauliflower florets (for mash) 1 tsp olive oil Salt, pepper, garlic powder Mixed vegetables (e.g., bell peppers, courgette, broccoli) What to do: Salmon: Season salmon with salt, pepper, and garlic powder. Sear in a skillet with olive oil over medium heat, 3-4 minutes per side until cooked through. Cauliflower Mash: Steam cauliflower until tender, then mash with a pinch of salt and a dash of olive oil for creaminess. Roasted Vegetables: Roast the mixed vegetables at 400°F (200°C) for 20 minutes or until tender and slightly caramelised. Shepherd’s pie - healthy twist 1 lb 93% lean ground beef or turkey 1 small onion 1 can diced tomatoes (drained) 1 can green beans (drained) 4 cups mashed cauliflower 2 TBS Italian seasoning Pink Himalayan Salt Black Pepper In a 10 in. skillet, add meat, onion and Italian seasoning; cook until meat is brown and onion is soft. Transfer to a loaf pan (or casserole dish). Add tomatoes and green beans. Prepare mashed cauliflower (mashed potatoes can be used instead). Ready made cauliflower can be purchased. Add cauliflower to the top of the green beans and bake at 400℉ for 15-20 min or until peaks of cauliflower is lightly browned. Remove and let sit for about 10 min. Serve and add salt/pepper to taste. If not on any restrictions, topping with shredded cheese is a nice touch!
