The level of "toast" on the barrel also influences flavour, with lighter toasts offering more subtle oak flavours and heavier toasts imparting smoky or coffee notes. ?Texture: Oak allows for slow oxygenation, which softens tannins and creates a smoother mouthfeel. Have you ever wondered about #WineLegs ? ?? If you’ve ever been to a wine tasting, you may have heard the word “legs” being used. Wine legs (also known as “Tears”, or “Church Windows”) are the droplets of wine that form on the inside of a wine glass after you have given it a swirl. ?? Explained by the #GibbsMarangoniEffect this wine science in action shows how gravity is pulling the wine down the glass, while the wine evaporates. As surface tension and viscosity change during evaporation the 'tears' or 'legs' begin to form and drip down. ????♀? This phenomenon is quite interesting (i.e. viscosity and surface tension related), and although #WineLegs don't tell a drinker about the quality of the wine they do give clues to the levels of alcohol and sugar in a wine. ?? Wines with higher levels of alcohol and higher levels of sugar have prominent and slower-moving #WineLegs as they drip down the glass. ?? A wine’s color is influenced by its age and grape variety. As they age, white wines gain vibrancy while red wines lose it. SWIRL: Give it air. Swirling helps to aerate and “open up” the wine, releasing its natural aromas. SNIFF: What do you smell? Much of wine’s pleasure is the aroma from the grapes which reflects the winemaking process. Can you believe we're on part 4 of comparing EDC selection to wine shopping?! Who knew they'd have so many similarities. ???? Today's topic: Go with something ?? well-aged ?? When it comes to both wine and EDC platforms, there’s a lot to be said for experience and age. Take Barolo wines - tannic, acidic, and astringent if they're too young. Before aging, they can taste harsh, bitter, and overly earthy, but with proper aging - usually 10 to 15 years - they transform into rich wines with notes of cherry, rose, leather, and truffle (yum). Newer EDC platforms can be similar - they may still have bugs to work through, lack of subject matter experts/support, limited features, and might not yet fully align with the complexities of clinical trials. On the flip side, an aged wine, like a 2016 Caymus Napa Valley Cabernet Sauvignon has had the time to mellow, offering balanced flavors with smoother tannins and hints of oak - qualities only time can bring. Likewise, an EDC that’s been around for a few years has refined its features, worked through early challenges, and adapted to industry needs over time. An established EDC offers a proven track record, robust support, and a level of reliability that’s hard to find in something brand new.
