I could build an "MVP" in a day... if I was just cobbling together pre-made templates and calling it done. But for someone new to product development (and new means less than a year of experience), it's not that fast. You're still learning the ropes. You might not even be comfortable with all the necessary tools yet. It takes me anywhere from a few days to several weeks to build a proper MVP still. (And that's after years of experience and dozens of projects) So it likely will for you too - or even longer. The key is to focus on truly validating your core idea, not rushing to build features.
