Breakdown of a $15 salad ?? I find these stats very interesting. Not just because I've worked with a lot of food businesses but because of the economics running behind them. In this case with Sweetgreen, the actual cost of the food, drinks, and packaging is only a fraction, $4.15 out of $15 of the final sale price. Labour costs are $4.35, and then rent, property costs, and other expenses build to $3.78. So we are at $12. So in terms of their foodservice operations, Sweetgreen is profitable, however its other overheads push it well into the red. So you're paying $15 for their salad and it's costing them $17.56.
