Pumpkin ?? spice (which typically contains cinnamon, nutmeg, ginger, cloves and sometimes allspice) is ubiquitous this time of year. When Starbucks sought to create a flagship fall beverage, legend says they were drinking espresso ? and enjoying pumpkin pie ?? and brainstorming how to transform the combination of a warm coffee and tasty dessert. Then in 2003, the Starbucks Pumpkin Spice Latte was born, and it quickly became their customers’ favorite seasonal ?? beverage. Competitors took note of the phenomenon and flavor chemists ???? went to work on creating similar beverage concepts. In the process, it was discovered ?? in 2015 that the Starbucks Pumpkin Spice Latte contained no actual #pumpkin. Apple Salad Ingredients: 3-4 large apples (a mix of Granny Smith and Honeycrisp is great for flavor contrast), cored and chopped 1/2 cup celery, thinly sliced 1/2 cup walnuts or pecans, chopped (optional) 1/2 cup dried cranberries or raisins 1/2 cup Greek yogurt or mayonnaise 2 tablespoons honey or maple syrup 1 tablespoon lemon juice Salt to taste Fresh mint leaves for garnish (optional) Directions: Prepare the Apples: In a large mixing bowl, combine the chopped apples, celery, nuts (if using), and dried cranberries. Toss them together gently. Dressing: In a small bowl, whisk together the Greek yogurt (or mayonnaise), honey (or maple syrup), and lemon juice until smooth. Taste and adjust the seasoning with a little salt, if needed. Combine: Pour the dressing over the apple mixture. Toss until all the ingredients are well coated with the dressing. The lemon juice in the dressing will help prevent the apples from browning too quickly. Chill: Although you can serve the salad immediately, letting it chill in the refrigerator for about an hour allows the flavors to meld together nicely. Serve: Give the salad a final stir before serving. Garnish with fresh mint leaves if desired. Raw Corn Salad with Cherry Tomatoes and Edamame Local sweet corn at its height of freshness is delicious straight off the cob. Here, those kernels are tossed together with other summery ingredients and a simple dressing of olive oil and lime juice for a colorful, refreshing salad that’s portable for picnics and potlucks and infinitely adaptable. This recipe is lightly adapted from one in “Pizza Night,” and while it would indeed go well with your favorite slice, it also makes a nutrition-packed meal on its own when embellished with protein-rich edamame and feta cheese. It’s also good with chips. Serves 4. – Susan Puckett Ingredients ? 1 cup frozen, shelled edamame ? Kernels from 4 ears of corn ? 1 pint cherry or grape tomatoes, halved ? ? teaspoon flaky sea salt or kosher salt, plus more, to taste ? Freshly ground black pepper ? ? cup extra virgin olive oil, plus more, to taste ? 3 tablespoons fresh lime juice, plus more, to taste ? 1 cup torn fresh basil leaves ? ? cup torn fresh mint leaves, finely chopped chives, or finely chopped green onions ? 1 avocado, peeled, seeded, and diced ? 4 ounces feta cheese, preferably in brine, cut into 1/8-inch-thick slabs Instructions 1. In a small pot of boiling water, blanch the edamame for 15 seconds. Drain and rinse under cold water; pat dry. 2. In a large bowl, combine the corn, tomatoes, edamame, ? teaspoon salt, and pepper to taste. Add the olive oil and lime juice and toss. 3. Taste and adjust seasonings, lime juice, and olive oil as desired. 4. Add the basil, mint, avocado, and feta. Toss gently and serve immediately. Yesterday at IN Food Marketing & Design a variety of food industry professionals gathered for a Food Connections meeting. The topic of conversations was: What food brand(s) are you fiercely loyal to and why? And now, I'm just curious...what brands are you fiercely loyal to and why? Most of my top 5 brands arrived there because one of their products checks the box for best taste and/or great ingredients. Simple Mills - Why? Their almond flour crackers are superior in flavor and they use quality ingredients. Rao's Specialty Foods, Inc. - Why? Best tasting pasta sauce with simple ingredients. Since stumbling across their sauce, I've had no reason to look elsewhere. Summer Lakes Beverage Company - local to MN. The BEST fresh squeezed, handcrafted mixers. I haven't had anything like it that compares to its fresh flavor. Jalape?o margarita for the win...just add sparkling water and alcohol if you'd like. Kraft Heinz - their ketchup (specifically) is what I grew up on and it's the taste I think of when I think of ketchup. It cannot go without being mentioned, the brand affinity first started with Kraft macaroni and cheese (10 year old me refused all other counterfeits). Surprisingly, through conversation with the group, I discovered how the condiment category is home to brands I am perhaps most fiercely local to (McCormick & Company Cholula, Huy Fong Foods, Inc. Sriracha, etc.) MINNEOATS LLC - a little biased here??, but our maple almond granola is the only one I eat! Ingredients I can pronounce and unmatched flavor/freshness. Take a mental run through of your pantry/fridge/grocery list and drop the brands below??
