I found this article to highlight some of the reasons why wine sales are decreasing. The consumer wants "unique and creative" yet the service teams responsible for guiding these conversations are seeing increasing turnover rates and industry tenure. I bet we'd see more unique lists as well as younger guest adoption if they could guide themselves both on and off premise.
Unlocking flavor of a beverage was specifically called out. However, not many casual restaurants, or especially grocery have the space to list the flavor profiles of a wine, beer, spirit or cocktail. Then we have the paradox of choice to deal with as well.
Thanks to solutions like Preferabli we have been able to put these flavors and the exciting products which match them, in the hands of the consumer, to deliver both a great recommendation, and the elusive "discovery" of something new and exciting.
Glad to see WINE MARKET COUNCIL share this insight.
