Sweet Potato Muffins Prep time: 15 minutes, Cook time: 20-22 minutes , Yield: approximately 24 muffins Ingredients: ? ? cup oat bran ? ? cup whole wheat flour ? 2/3 cup sugar ? 1.5 tsp cinnamon ? ? tsp ground ginger ? ? tsp ground nutmeg ? 1 tsp baking soda ? 1 tsp baking powder ? 1/8 tsp salt ? ? cup apples, skinned, finely chopped ? 1 cup sweet potato, baked and peeled, then mashed ? 1 large egg ? 2 large egg whites ? 3 tbsp canola oil ? 2/3 cup plain low-fat yogurt ? 1 cup raisins, optional ? 1/2 cup walnuts or pecans, optional Directions: 1. Preheat oven to 350 degrees 2. In bowl, combine oat bran, flour, sugar, spices, baking soda, baking powder, salt and apples. 3. Add sweet potatoes, egg, egg whites, oil and yogurt. Stir thoroughly. 4. Spray muffin tin with vegetable spray and spoon approximately ? cup into each muffin. 5. Bake 20-22 minutes.
