Who knew immune support could be so tasty? Meet Burdock!! Used for centuries as a traditional remedy for a wide range of ailments, it is the root of the Burdock plant that is harvested for its medicinal qualities. Burdock Root has been traditionally used for soothing the kidneys, as a blood purifier, relieving the lymphatic system, GI tract disorders, stomach ailments, constipation, fever, infection, fluid retention and skin problems. Digestion Soothing Burdock Root Soup Recipe: 3 Tbsp Burdock Root 8 oz shiitake mushrooms 8 oz cremini mushrooms 1 medium yellow onion, diced 2-3 cloves garlic, minced 3 small bok choy, cleaned & chopped 2 cups rough chopped kale 3 medium organic carrots, sliced into rounds 3 Tbsp soy sauce 8 cups broth salt and pepper to taste TO make this digestion soothing soup: Dice the onion and add it to a large soup pot over medium-low heat. You may add 1-2 Tbsp water or vegetable broth to prevent sticking. After onion cooks, add minced garlic to the pot and continue cooking. Stir occasionally and add additional broth if necessary to prevent sticking. Once onion has softened, after a total of 5-7 minutes of sauteing, add sliced mushrooms to the pot. Stir mushrooms and onion gently, and cook over medium-low heat until mushrooms begin to brown. After mushrooms begin to brown add bok choy, soy sauce, kale, carrots and burdock root to the soup pot. Gently pour in 8 cups (2 quarts) of broth and increase heat to high. Once the soup begins to boil, reduce heat to low and cover. Simmer soup for 15-20 minutes, stirring occasionally. Season with salt and pepper to taste. Garnish and serve!! What is your favorite way to use Burdock?
