Thanks to Texas Highways Magazine for the shout-out in their April Discovery issue!?Check out their delightful coverage of Insects as Food and Feed in Texas. It’s hard not to be distracted by the gorgeous pictures of entrees, drinks and appetizers inspired by authentic, traditional Mexican dishes that include crickets, grasshoppers and ants. But the meat of the article lies in the discussion about how insects are key to solving worldwide challenges as the human population grows over the next 25 years, even though human consumption of bugs goes back thousands of years. Texas restaurants that use insect ingredients may be looking to the past for inspiration, but it’s the insect agriculture sector where Texas is at the forefront of innovation. Dr. Jeffery Tomberlin (CEIF’s Center Director at Texas A&M University) explains the difference between insect-eating and CEIF’s work in utilizing insects as novel proteins for food and feed and harnessing their unique capacity to break down and repackage nutrients. The section below, in particular, distills the objectives of the Center beautifully while recognizing the challenges we face with regard to the public perception of entomophagy— “First, it aims to use insect protein as feed for farm animals, while also making insect ingredients more feasible for widespread consumption at the dinner table. To achieve the latter, these insect innovators understand they’ll have to upend some firmly ingrained attitudes about what should and shouldn’t be put into our bodies.” — J. Let's rethink the how, not the cow. This is why I think meat tax addresses the wrong problem. Denmark has introduced the world’s first carbon tax on animal agriculture, a policy that may not support a socially just and inclusive food system transition. In my World Economic Forum op-ed, I advocate for responsible policies that address the rising demand for animal protein during times of resource scarcity, while avoiding punishing farmers or consumers. It's vital to facilitate practices that require fewer and better-managed animals: we recommend promoting regenerative smallholder farming alongside new production systems such as cellular agriculture, precision fermentation, and algal production. I fear that Denmark's tax does not efficiently promote these goals. Learn more about my position in the full op-ed you can find via the link in the comments below.

This week's sessions on Food and Agriculture during the Climatebase Fellowship have been an absolute highlight for me! The insights shared were truly eye-opening, especially the staggering potential of regenerative agriculture in reducing emissions. Did you know that practices like agroforestry alone could sequester up to 9.28 gigatons of CO2-equivalent by 2050? That's massive! Through deep dives and industry panels, we explored transformative practices fto build resilience. From discussions on world hunger and sustainability led by Alexa White, Ph.D. (c) to innovative approaches in insect farming with Maria Alexandrova of Nasekomo, every session emphasised the urgency of building healthier and more sustainable food systems. A special shout out to Julia Akker who led the curriculum sessions, for providing invaluable knowledge and inspiring so many questions. It's clear that with agriculture responsible for approximately 26% of GHG emissions, there's no time to waste. Continue discussing and exploring alternative solutions to tackle this challenge head-on is a must. It’s so inspiring to be part of the Fellowship community and I can’t wait for next week’s sessions on Nature-based solutions.
