Mediterranean Tomato and Bean Soup 12 oz 360 g Dried cannelini beans (see Note) 4 oz 120 g Farro (p. 641) 3 qt 3 L Water Sachet: 2 large 2 large Fresh rosemary sprigs sprigs 1 lb 12 oz 800 g Canned whole tomatoes 2 fl oz 60 g Olive oil to taste to taste Salt 1. Rinse and drain the beans. Soak overnight in enough water to cover by several inches. 2. Put the beans in a heavy pot with the farro, water, and rosemary sachet. 3. Bring to a simmer, and simmer gently 60–90 minutes, until the beans are almost tender. 4. Place the tomatoes and their juice in a food processor and process to a coarse purée. 5. Add the tomatoes and olive oil to the pot. Season to taste with salt. 6. Continue to simmer until the beans and farro are tender. Add more water if the soup becomes too thick. 7. Remove and discard the sachet. Adjust seasoning with more salt if necessary. 8. At service time, drizzle each portion with a little good-quality olive oil. #chefs #foods

Ingredients 2 x carrots 250g lamb leg,diced 10g fresh gingeringredient 80g pitted prunes 120g lentils, green 1 x red onion 2 x clove garlic 2 tsp coriander seeds 500g vegetable stock 20g fresh coriander Method 1. Peel the carrots and onion, then chop roughly into 2cm chunks. Place into a medium-large saucepan with the diced lamb leg 2. Bash the garlic cloves using the flat of a knife, then remove their skins. Slice the ginger. Place the prepared garlic and ginger, coriander seeds, prunes and vegetable stock into the pan with the lamb and the vegetables. The stock should just cover the contents 3. Place the saucepan over a medium-high heat and bring to the boil. Once boiling, place a lid on the pan and reduce the heat to a simmer for 15 minutes 4. After 15 minutes, remove the pan lid and stir through the lentils. Allow to simmer with the lid off for 20 minutes, until the lentils are cooked and have thickened the sauce 5. Place in the oven at 400 degrees for ~45-55 minutes or until soft on the inside and crispy on the outside. 2. Prepare all of your toppings and set aside. 3. Add the ground beef to a large greased skillet over medium-high heat. Break it up then season it with the list of seasonings above. Let cook for 6-8 minutes.
