Some good questions. I look at winemaking as a spectrum, at one end of the spectrum you have mass market,highly manipulated,overly sweet wines that are almost confected beverages driven more by additives and technologies than respect for the variety or place. Wines that are guilty of “sins of commission “. At the far other end of the spectrum you have “zero zero” wines where high volitile acidity,h2s issues and floaters are worn like some kind of badge of honour. These wines are guilty of “sins of omission”. VA and Brett aren’t terroir , they obliterate any sense of place or variety at high levels. As a winemaker ,I strive to be at neither end of the spectrum, shooting for delicious thoughtfully crafted wines with a real sense of place. “Either,Or” is potentially a false construct of “agenda” wine. The spectrum of winemaking is more diverse and nuanced than the polarized evangelicals for one side or the other pretend. Your thoughts? #winemaking #bcwine #wine

On the Palate: A Wine’s Structure Your Unique Palate If you’re into wine, no doubt you’ve encountered the terminology of “nose” and “palate”. This is probably obvious, but the nose of a wine is everything that can be gleaned from smelling, while the palate encompasses everything that is gleaned from actually tasting a wine. The main component of the palate is what’s called a wine’s structure, which has five main components: tannins, acidity, alcohol, sugar, and body. We just spent two incredible days at the Oxford Wine Festival, where 1,000 wine lovers tasted 500 wines from 50 wineries—and one little non-alcoholic wine brand. We weren’t sure what to expect, but we stayed true to our belief that BOLLE is a wine brand first, that just happens to be non-alc. The results... We conducted around 400 tastings (customers paid for each one), and the reactions were eye-opening: 5-10%: Actively searching for a good non-alc wine. 30-40%: Tried it before realizing it was non-alc and were stunned "would not have known" 30-40%: Skeptical, but after convincing them to taste, they loved it. 10-20%: Refused to try—“Why pay for something without alcohol?” What stood out was that over 80% of people had tried non-alc beer and liked it. But 0% had previously tried a non-alc wine they enjoyed (literally nobody). By the end, we converted 400 people into Bollievers. Next time someone asks if they like non-alc wine, they’ll say: "Yes, we like BOLLE." #oxford #wine #tasting #skeptical
