One of the more niche applications for UV treatment? Brine disinfection in the meat and poultry industry. Listeria and lactic acid bacteria are two of the main causes of shelf life and spoilage issues in this industry.?Both are capable of surviving and reproducing in low temperatures and relatively high salt environments. But brine treatment can be difficult…adding chemistry is not ideal unless you have a unique palette that prefers the taste of chlorine. And treatment with a light based solution is challenging…brine solutions are typically kept at temperatures well below 40F (which is the minimum operating temperature required for most standard UV systems).?In addition, brine concentrations are often in the 7%-14% range…this has a negative effect on UV transmittance (preventing UV light from penetrating the solution and inactivating the organisms). In 2003, Virginia Tech initiated a study with some support from Hillshire Farms to evaluate the use of UV in this application and to determine if UV could be utilized as a Listeria mitigation strategy in brine.?See attached paper published in the Journal of Food Protection. The findings??Utilizing a uniquely designed medium pressure UV system with a slender vessel and a process involving a high rate of tank recirculation resulted in a >4 log reduction of Listeria and lactic acid bacteria even in 13% salt concentrations and temperatures as low as 4C.?The higher the salt, the colder the temperature, the lower the recirculation rate, the worse the results were. I know, I know…that’s great but what about Listeria in other parts of the plant you may ask.?It’s not just living the “Salt Life”…it’s ubiquitous and particularly troublesome on surfaces, floors, drains, etc. throughout the plant.?Fortunately, Listeria is highly susceptible to inactivation with UV so properly implementing UV into those applications may provide some benefit as well. #foodsafety #engineering #meatindustry #poultryindustry #listeria #saltlife

Today, a food manufacturing client site asked me to explain vector swabbing. So here it is. You continue this star burst pattern until you find the source of the pathogen. Listeria spp. hits are though to get rid of in your facility if you are not designing and following proper procedures. So please make sure you include vector swabbing in your procedures and use it during your investigation. Not to be confused with the need to obtain 3 negative swabs from the affected swabbing location. #EMP #environmentalmonitoring #VectorSwabbing

??USDA:EcO157 & Other Pathogens Contamination Predictive Model on Lettuce Excerpts ??Now, ARS researchers and their collaborators have developed a weather-based model that could help predict the contamination levels of EcO157 and other pathogens on lettuce. ??Outbreaks of foodborne illness due to EcO157 associated with lettuce grown on the Californian Central Coast and Imperial Valley show a seasonality of occurrence,” says Maria Brandl, ARS research microbiologist with the Produce Safety and Microbiology Research Unit in Albany, CA. “The seasonality of lettuce-associated outbreaks indicates a need for proactive measures based on weather parameters.” ??The presence of pathogenic E. coli in lettuce poses a significant concern for the produce industry in the United States. One particular strain, E. coli O157:H7 (EcO157), has been associated with outbreaks of foodborne illness linked to lettuce consumption. With the industry valued at over $4 billion annually, the ramifications of such outbreaks extend beyond public health concerns, to economic impact on the produce industry and erosion of consumer confidence. ??Regulatory agencies, poised to leverage the model's predictive capabilities, stand to benefit significantly in assisting the industry with a simple tool to enhance the microbial safety of leafy greens.
