#TalkTuesday After a long day it can be hard to get motivated to take the time to cook a healthful meal. May be you finish late in the evening, or may be you have other responsibilities that come first. If this is you, here are a few tips that may help you eat better after work: - Batch cook. Even if it is just making enough food for two nights, batch cooking means that you simply need to reheat a nutritious home-cooked meal instead of starting from scratch. If you can, load up your freezer with a selection of meals. - Look up quick recipes. There are lots of recipe ideas online. You could look at stir-fries (use a different combination if having them more than once a week), or find Jamie Oliver's 30-minute and 15-minute meal ideas. - Keep frozen vegetables in the freezer. These take out the preparation time, and generally take less time to cook than fresh (they can also be higher in nutrients than fresh due to their handling and storage). #HealthyEating #ThinkAlible #ForAHealthierYou

One of the more popular recipes on my blog is this Indo Chinese style Chilli Prawn Fried Rice. And I can see why....it’s a simple, easy to put together delicious meal for the whole family. I always cook a healthy, warm nourishing lunch, my main meal of the day, and include at least half a plate of cooked veggies (my minimum criterion for a wholesome, balanced meal!) Then this simple kitchari recipe rounds out my balanced meal with a soothing blend of whole grain/seed and high protein mung dahl, the most digestible of the lentil family. I make this kitchari in my Instant Pot, as it's time-efficient, doesn't burn, never sticks and clean-up is fast, without scrubbing! ????This is one of my favorite recipes – it’s indulgent but still good for you – and even more importantly, it’s delicious! TIP: It’s not just for breakfast ?? Sriracha Avocado-Egg Toast (serves 1) ??? 1 tsp olive oil ??? 1 egg ??? 1 slice of sprouted grain bread ??? ? avocado, mashed ??? Sriracha sauce ??? 1 Tbsp hemp hearts (optional) ??? Salt and pepper, to taste Heat the olive oil in a small skillet over medium heat. Crack open the egg and put it in the pan and cook until it’s sunny side up. While it’s cooking, place your slice of bread in a toaster. Once the toast is ready, spread the mashed avocado on it. Top the toast with the egg and a drizzle of sriracha sauce. If using, sprinkle the hemp hearts on top. Season with salt and pepper and serve immediately. Yum! Don’t forget to save this post and follow me for more healthy recipes every week!?
