In a world of uncertainty, one can always find joy in cake. This is Strawberry Shortcake version 5.0. While the previous versions were pretty good, this one will be at its peak from the lessons learned. Why is cake on LinkedIn, if pastry chef is not my profession? Well, my partner has her BFF coming over from Montreal this weekend and she specifically requested this. BFF's are very rare, with maybe a couple in a lifetime. We must nurture these relationships and make lasting memories so that when you get old together, you can laugh while saying, "remember that time...?" For my technical minded friends, this cake is made up of 3 layers of Japanese sponge cake. It is absolutely light, fluffy and rich at the same time.The filling is with Bonne Maman, strawberry jam, whipped cream and a confit of strawberries in orange blossom extract and some sugar. Sounds like an exercise in contradictions, but trust me, it is not. Also, as someone who is actively working on a better and healthier version of myself, I will taste a forkful or two, just to satisfy my craving. This is actually less a labour of love than when I make macarons. You must not judge me by these, as I make them for the people close to me, and to make my friends happy, which means the world to me. Parting shots (of whipped cream): - Whip it good - Devo - Take that occasional whipped cream shot to remind you of younger days. - Make good things for friends, be they food or actions. - Life is not a dress rehearsal. - Keep the past where it belongs, in the past. - Keep burning the day, every day. #cakeisgood #burntheday #makesomeonehappy

As afternoon tea becomes an increasingly popular consumer occasion, operators are looking for ways to add new and exciting twists to their offerings to help them stand out from the crowd. Here’s what we’re expecting to see this year… ???Traditional treats with a premium twist – operators are experimenting with classic afternoon tea sweet treats and elevating them with premium ingredients. This could be as simple as adding Sicilian lemon oil into traybakes, or mascarpone to the frosting of a fondant fancy ??Global influences – French patisserie has long been a staple on the afternoon tea stand, but we’re now seeing flavours from the Mediterranean having an influence. Examples include swapping out British ham in finger sandwiches for Italian antipasti like prosciutto crudo. ??Changes with the seasons – at Compleat Foodservice we help operators elevate their offerings by providing part finished mini cream cake assortments which can be premiumised with decorative seasonal ingredients. Rose and hibiscus petals are great additions to our mini cream cakes in summer months, and in the autumn and winter months richer, more decadent decorations such as Barry Callebaut chocolate can be used to offer a decadent twist to these classic treats. #Foodservice #AfternoonTea
