Are there any specific instructions that you still follow now? Growing up, my mum would have smacked my hand if I put both hands into the bowl. By just using one hand to knead, the other hand can move the bowl round, which helps to form the dough. Using one hand avoids you over kneading the dough, which can result in tough chapatis instead of soft fluffy chapatis. Also, it is simply much cleaner and allows you to use the other hand to add more flour or water if you need to. Are there any specific instructions that you still follow now? What do you know about micro-blistering, the art and science of creating tiny bubbles in your pizza crusts? Wilhelm Rodriguez, owner of Papa's Pizza in Cabo Rojo, Puerto Rico, and a member of the U.S. Pizza Team, will spill his trade secrets at PMQ's upcoming Pizza Power Forum (September 4-5 in Atlanta). Micro-blistering can double your pizza's flavor, Rodriguez says, but it will take time - we're talking a long fermentation of at least 36 hours, preferably 56 to 60 hours. Moreover, "The way that you handle the dough is very important. You must handle it gently and respect the cornicione if you want to get those blisters. You want to trap all that gas in the dough skin when you are working with it."
