To preserve the quality of our coffees, all of our coffee is roasted to order. This means the moment you order a coffee online, it gets roasted, bagged, and shipped to you the very next day. Anything ordered over the weekend will be roasted and shipped out Monday.

Looking at the range of coffee beans, it's easy to tell what makes dark roast coffee taste different from light roast coffee. Farther along that scale, specifically when medium roasts start to turn dark, it's more difficult for the average coffee consumer to note the disparity between two similar roasts. What makes a great cup of coffee?? How we roast our coffee beans Coffee beans are a the key to great coffee. The most important component to making coffee is the coffee grounds that you will brew. Green coffee beans are roasted to develop flavor. During roasting, our coffee beans will make a cracking sound as they transition from green coffee to light roast coffee. The beans will crack again as they transition from medium roast to dark roast. Medium roast is sweeter. Dark roast develops spicy flavors, and french roast takes on a smoky flavor.

CloudSplitter Coffee is specialty coffee, which is simply a description of the high quality of the raw coffee beans. Nearly all big coffee companies serve commercial grade, which is machine harvested, meaning you’re getting coffee beans that are mostly ripe, mixed with beans that are over or under ripe. The under-ripe beans create a sour taste, so to mask this, the roaster over roasts the coffee beans. I can think of a coffee brand with a green logo that people always complain about tasting burnt…well now you know why. Specialty coffee is hand picked and hand sorted when it’s perfect and can be roasted in ways that bring out the characteristics of the region and bean. We simplified a general roast curve to give some insight into the time and temperature needed to roast great coffee. Green, unroasted coffee goes into our roasters and around the 6-minute and 341 ℉ mark, it starts to change color. The first crack happens around 9-minute and 400℉ and where our balanced and interesting roasts take off. Keep on roasting and you will have a pile of bean ash and probably a fire. Not good. We offer a broad range of roast profiles on our menu to suit different tastes. Lighter roast profiles tend to emphasize the unique characteristics of the coffee, while darker roasts tend to highlight the roast character. Each coffee has a specific roast-level target that we evaluate using an Agtron light reflectometer. The Agtron bounces ultraviolet light off a sample of coffee and back to a sensor to analyze the color of ground or whole-bean coffee. It then gives the sample a number representing the degree of roast. The lower the number, the darker the roast. For example, our darkest roast, Forty-Six has an Agtron score of 52 while our single-origin roasts are 77-80. Learn more about coffee roasting: https://buff.ly/3InYy6k

I love my coffee. And JUST COFFEE, by the way. Yes, I come from a simpler time. A time when coffee was just…coffee. It was black and strong and had been sitting on the warmer so long that it had burnt down and congealed into a slowly moving semi-solid that oozed rather than poured into your Styrofoam cup. Yes, Styrofoam, that toxic man-made compound that, when exposed to heated substances like, say, coffee, leached into them with its cancerous toxicity. Nowadays, I can’t get “just coffee” without getting a raised eyebrow from the barista at the local coffee shop. They can’t fathom how anyone could just want plain coffee, not some contrived, concocted caffeinated beverage with more ingredients than jambalaya. Beverages they created simply to justify their existence and employability by the Corporate Coffee Cabal. They always greet me with, “What can I get started for you? Would you like to try our new frozen double espresso mochachialatte?” “Nah, just a regular coffee,” I’d say. Long pause, followed by nervous glance at the other Starbucks employees. “Nothing in that? Shot of syrup?” “Nope, just regular black coffee.” “You want room for cream?” “Just fill it up.” My buddy Kevin who is very into coffee and all things coffee can’t understand my cavalier attitude towards coffee. How I can possibly drink those Folgers tea-bag-type individual coffee servings you dunk into hot water in the morning?
