Filipinos consumes more meat than fish. Look at all the lechon manok, ‘kanto-fried-chicken’, beef pares, and sisig places all over the Philippines. And do you know that bulk of the meat used in the country are all imported (except for the makers of roast chicken - which does not fare well in cooking when frozen prior)? Can we please make famous grill-cooking or even frying fish on every street corner? We have too many mudfish, tilapia, snake fish, small-sized bangus, other invasive fish, etc which we can all have as everyday food. All they need to spice it up a bit are the default herbs and spices in a typical pantry. There is no need for liquid seasoning, HVPs, phosphates, soy sauce, soy proteins, extenders and fillers. Severin Eder along with Eduard Müller, co-founders of catchfree, are rethinking seafood...no nets, no fishing boats, just plants ?? “Our inspiration was simple,” Severin shared. “In Switzerland, we largely depend on imported fish and seafood, which got us thinking about the environmental toll of traditional fishing practices.” Recently, Catchfree used plant-based ingredients to create shrimp to nail the texture, taste, and that signature bite. Severin explains, “ We’ve spent the last three years perfecting the texture and even incorporated paprika-based colorants for the natural look." For meat eaters, seafood is a healthy protein option and fisheries can be managed in a sustainable way. Along the Atlantic coastline, seafood is relatively plentiful. So where can you run out and get some local fish? Well, it’s complicated - literally - U.S. seafood goes through many hands before it reaches the dinner table, often ending up outside the U.S., while we get seafood that’s been farmed or shipped long distances. In this case, eating local means doing your research and knowing who you’re buying from. It also means breaking away from the salmon filet to try the native but, oddly, less familiar seafood harvested from our own shores. https://lnkd.in/esvU2-vf

A few different ways to harvest lettuce...?? cut the outermost leaves,let the rest of plant continue to grow... cut the head off at the ground, let the plant regenerate itself.. or. pull the plant and move on....?? it's best to harvest early in the morning, before any hot weather...?? immediately submerge in ice water to maintain crispness...?? completely dry if storing in the fridge. wish I could grow avocados here..?? today's salad is fresh lettuce, fresh crunchy radishes, goat cheese, avocados and Greek dressing, yum, are you hungry yet? You would be surprised how many challenges you need to overcome to serve an always fresh 'fish of the day' ?? The main challenge for our venue is certainly the volatility of the fish market, which is influenced by a multitude of variables: The season, current weather conditions or the daily form and luck of the fishermen.?Sometimes, everything goes according to plan - the fish, expected in the respective season shows up, the weather is perfect, and the fishermen catches the fish effortlessly. However, there are also days when stormy weather completely upsets the process so that all plans for fishing must be cancelled, and other times, all pre-conditions seem ideal, but the fish just won't show up for reasons no one can explain, because the sea is a mystery sometimes. So what are we doing at Dave's to still be able to offer you our fish of the day? Staying in close contact with our East London neighbourhood supplier, Bethnal Green Fish to keep us updated about availabilities is key. As a matter of fact, these exchanges usually take place on Tuesdays and are a vital part of our weekly logistic routine. And depending on what fish is available, our chefs make a decision and become creative by finding the right ingredients to combine it with - and that's how our sea bream with verjus velouté, pink fir potatoes, fresh herbs and garlic chips came about recently (see photo).
