Bowmore Aston Martin 10-year-old Perhaps I should begin with a declaration. I adore Bowmore Distillery. Back when I was taking my initial tentative steps into the world of whisky, Bowmore’s 12-year-old was something of a favourite and the distillery was the first I visited when I first set foot on the island back in 2014. It remains a favourite stop today. I’ve always found the people at the distillery to be especially warm and friendly and the tasting bar, which overlooks Loch Indaal, is a lovely spot to enjoy a dram or two. Then there’s the experience of sipping whisky in the famous No 1 Vaults, something every whisky lover should do, at least once. That said, my relationship with Bowmore as a brand has occasionally been somewhat strained over the years. My issue doesn’t lie with the distillery itself – it’s always been my impression that the people working there take great pride in the place but there is perhaps a feeling that decisions taken further up the chain aren’t always to the benefit of the product that makes it to the shelf. Bowmore is owned by Suntory and it is they who truly shape the product, which is only natural – the owners have a particular market in mind and tailor the product accordingly. If the market craves heavily sherried, low strength whisky, then that’s what Bowmore will be. In the great scheme of things, we whisky geeks, who seek out higher strength, naturally coloured whiskies, simply aren’t much of a priority. I accept this as the way of things but that doesn’t mean I have to like it. Bowmore is a fantastic spirit and its single malt can be as good as anything in Scotland when presented at its best. Distillery Pronunciation.????Each of Scotland’s whisky distilleries has a unique name BUT some of those names are extremely tricky to pronounce. Here’s a quick guide to help you master the trickiest of them all. Auchentoshan (ock-en-tosh-an): Lowlands distillery Auchentoshan is known for producing triple distilled single malt whisky, a relatively common practice in Ireland but a rarity in Scotland. Say it as ‘ock-en-tosh-an’. Bruichladdich (brook-laddie): Known for its heavily peated expressions and sustainable production methods. Despite its intimidating appearance, the correct pronunciation of Bruichladdich is quite straightforward – ‘brook-laddie’. Bunnahabhain (boo-na-ha-ven): Bunnahabhain is unusual in Islay, not because of its name but because it only produces unpeated whisky. Despite its seemingly complicated name, pronounce it as ‘boo-na-ha-ven’. Caol Ila (cul-ee la) Caol Ila is known for its rich, peaty, maritime expressions. Pronounce it ‘Cul-ee-la’, stressing the ‘ee’ and softening the ‘la’ sound. Glen Garioch (glen gee-ry) Glen Garioch on paper may seem reasonably straightforward, however the pronunciation, stemming from ancient Doric dialect, is much different than it first appears. Say it confidently as ‘Glen Gee-ry’. Kilchoman (kil-ho-man): Islay-based Kilchoman has gained popularity in recent years for its single estate farm-style whiskies. Pronounce it as ‘kil-ho-man’, softening the ‘ho’. Laphroaig (la-froyg): Laphroaig is famously King Charles’ favourite Scotch whisky. It's known for its heavily peated whiskies that strongly divide opinions amongst whisky lovers. Pronounce it as ‘la-froyg’, and you'll master it beautifully. Oban (OH-ben) The simple yet sophisticated name of this small town distillery tends to unwittingly trip people up. Pronounce this as ‘OH-ben’, placing a strong emphasis on the first syllable. Torabhaig (torr-uh-vay) The Isle of Skye’s newest distillery, Torabhaig is still on the road to producing its first single malt whisky but it’s making waves with its commitment to traditional production methods. A WEE BUT VERY EXPENSIVE 84 YEAR OLD OAKY, SMOKY, DRAM OF MALT The Macallan is raising the stakes—and prices—on its collectible whisky and betting that single-malt aficionados will be willing to lay down double six figures for an extra-aged dram of “liquid history,” plus as a sneak peek into what the distillery’s future holds. The two-bottle?Time:Space Collection?comes timed to the 200th anniversary of the single-malt Scotch brand and includes a rounded, doughnut-shape bottle of an 84-year-old whisky, the oldest and rarest from the distillery. Then in the center of that bottle fits a 375ml flask of a five-year-old single malt, distilled in 2018 when the Speyside whisky maker opened its new campus; it’s notable as the first release from the new facility. It’s a stratospheric figure to be sure, but the Macallan has a?history of fetching the highest-ever price?at auction. Collectors take note. The 84-year-old is drawn from two casks, both distilled in 1940: a first-fill American oak butt and a second-fill European oak butt, both seasoned with sherry, which is typical of Macallan’s house style, and bottled at 43.6% alcohol by volume. It seems hard to imagine that a whisky this old wouldn’t be crazy over-oaked and tannic, but it’s true, says master whisky maker Kirsteen Campbell. “It’s this wonderfully rich, resinous oak note we find in old Macallans,” she says, describing the flavor as “antique oak.” There’s also an uncharacteristic smoky waft to the bottling that sits beside the sherry-soaked house style. “It’s quite different from the rest of our ranges,” Campbell explains, “simply because in those days, the distillers at the time would have only been able to access peated malt.”

Tamnavulin 2010 - Small Batch - Ruby Port Finish. A bourbon barrel and a half of Tamnavulin that we married together in a Ruby Port pipe to give a richer, and considerably pinker experience. Glasgow 2017 - Single Sherry Cask. Despite living in Aberdeenshire for nearly 20 years, Andrew still thinks Glasgow is his home city. Rather than correct him we've allowed him to indulge in this sensationally good value sherry bomb with maybe our favourite label of the year. Un autre Petit Chien Brun, l'encore. One of our very first releases was a stunning 1993 single cask cognac, errr we mean French Brandy. Well, here's another 1993 single cask early landed, late bottled 30 year old cognac. Our way of saying cheers, or santé to our customers. This one is an exclusive on our website as there wasn't enough to go around. It's also incredible value. Very Secret Speyside 1998. A very specially selected single barrel single malt. What does very specially selected mean? Well it's code for more expensive. This cask came to us as part of a large parcel, it was the most expensive cask we'd ever purchased, we did consider what to do with it, bottle it or move it on. But we fell in love at the first sip and really couldn't pass the opportunity to bottle something so special, so tasty and although age is just a number, our oldest single malt to date. Last and definitely not least, Highland Park 2014, random barrique. This was supposed to be a hogshead, it wasn't. We know it's a barrique, but that is all. It's a pleasant surprise though even for bottlers inherently wary of red wine casks! Orcadian magic with a French twist. As independent bottlers, our job is different from the distillers. While they seek consistency, an incredible skill in its own right, we are on the search for the curiosities, the little jewels amongst casks and the real stand out drams. This cask was a little jewel, a little barrique shaped jewel. And if you thought our Kyro cask label was hard to read, wait until you see this one! Read a great quote from Richard Seale, Master Distiller & Blender at Foursquare Rum the other day. Whisky is his main competition in the aged spirit market, and he clearly doesn't take it lightly. Below is the excerpt from an article written by Neil Ridley for the Malt Whisky Yearbook: "Scotch attracts high value both at retail and secondary markets. People trust the contents. It has intrinsic value which comes from artisanal production and long maturation. The debate about age and preference is irrelevant: a long matured Scotch (or rum) has real intrinsic value. This is objective truth." I would add to this by saying that the realisation of its value doesn't take place until the whisky is bottled, opened and shared in good company. This is the point where the time and effort put into its creation can be fully appreciated through the depth and quality of the experience delivered. The beautiful hue, rich smell, and complex delivery of flavours. As cask owners, we are custodians of this amber liquid. It is our responsibility to ensure that it reaches the end of its journey where it can deliver its intended value. This is the true joy and absolutely privilege of cask ownership. Slainte!

Have you ever held, or even better, tasted a whisky from the 1950’s? This fine old bottle is almost 75 years old, bottled in the post war years, into a world recovering and eager to enjoy the finer things in life again. One of the few Macallan bottles to feature a screw top, which you can see hasn’t helped the fill level over those 70+ years. The Pure Malt designation is a term prohibited in Scotch whisky today due to its ambiguity. In the post war years when blended whisky and grain whisky were commonplace, Pure Malt was used to describe whiskies that today we would simply refer to as Single Malt. Typically multiple casks from a single distillery blended to perfection. Though later years would see Pure Malt used to describe any whisky that contained only whisky distilled from malted barely, including blended malts (malt whisky from more than one distillery) - this dual distinction is where the ambiguity of the term stems from.
