G'day Mimosa is one of the tea-infused mocktail recipes Alan & I have created on our Adventures with Tea website. (FYI ... G'day Berry is an herbal blend of strawberry & kiwi. ??) And in case you're not familiar with cold-infusing, it's a great way to incorporate your favorite tea into juice, milk, or other liquids. Simply add the loose tea in the juice and shake or stir a little to combine. Cover and leave in the fridge overnight (at least 6 hours) to infuse the flavor. Lambton & Jackson's 6th Canapé of Christmas - Gravlax Tartare Ingredients 200g Lambton & Jackson Gravlax, diced Half a red onion, finely sliced Fresh tarragon or chives, finely chopped Cornichons, chopped (to taste) 1 lemon, zested and juiced 1/2 cucumber, diced Cracker or Crostini Method 1. Mix the Tartare: In a mixing bowl, combine the diced gravlax, finely sliced red onion, chopped tarragon or chives, cornichons, diced cucumber, lemon zest, and lemon juice. Gently toss everything together until well combined. 2. Serve: Spoon the gravlax mixture onto a cracker or crostini. Garnish with more tarragon or chives if so desired. Simple to make and simply delicious to eat.

Raspberry Mojito: Ingredients: - 10 fresh raspberries - 6 fresh mint leaves - 2 tablespoons sugar (adjust to taste) - 1 lime, juiced - 2 ounces white rum - Club soda - Ice cubes - Mint sprig and raspberry (for garnish) Instructions: 1. In a glass, muddle together the raspberries, mint leaves, and sugar until the raspberries are crushed and the mint leaves release their aroma. 2. Squeeze the lime juice into the glass and muddle it with the raspberry-mint mixture. 3. Add the white rum to the glass and stir well to combine. 4. Fill the glass with ice cubes. 5.
