? We're returning for another year at the premier conference in Food Science and Technology! Our colleague, Olaia Estrada, a researcher in the laboratory division, recently participated in the 38th edition of the Effost Conference (European Federation of Food Science and Technology) held in Bruges, Belgium, hosted by KU Leuven and Ghent University. Under the theme "Future Food Systems: Innovation through Progress at Scientific Interfaces," Estrada presented four research posters to conference attendees, showcasing the results of various research projects, titled: ?? Exploring artichoke by-products for sustainable kombucha innovation: a circular economy approach ?? Ecology and technological-functional characterization of wild lactic acid bacteria and yeast isolated from different sourdoughs ?? I am thrilled to share that my first paper as part of my PhD journey has been published! ??? This paper, titled "Stability of R-phycoerythrin from Furcellaria lumbricalis – Dependence on purification strategies and purity", explores how the thermal and pH stability of R-PE purified from F. lumbricalis was affected by three different purification strategies: microfiltration, ultrafiltration and multi-step ammonium sulphate precipitation. The stability of R-PE from F. lumbricalis has not been investigated earlier. Additionally, the effect of different purification methods such as membrane filtration, ammonium sulphate precipitation neither individually nor in combination has not been investigated on the stability of the colorant from red seaweed, particularly in F. lumbricalis. ?? Key findings: 1. Significant interaction between physiochemical factors and purification methods of R-PE. 2. Thermal stability of R-PE was observed till 40 °C in different purification strategies. 3. pH stability of R-PE was observed from pH 4 to 10 after microfiltration. 4. R-PE purified by multi-step ammonium sulphate precipitation showed higher stability than other purification strategies. [?? New Published Paper]. We are pleased to present our most recent paper, titled "Abiotic factors impact on oak forest decline in Lorestan Province, Western Iran." ? ?? ?? ?In this manuscript, we analyzed abiotic factors such as climate properties, topographic features, land use, and soil properties from 1958 to 2022 to assess the oak decline. We found that higher elevation areas with steeper slopes and diverse topography show significant potential for enhancing oak tree resilience in the face of climate change. ?? This research project involved a tight collaboration between the Geospatially Big Data Computation and Internet of Things Lab at K. N. The The Good Food Institute‘s 2023 State of the Industry report on Fermentation is unsurprisingly filled with great content but I’m still reeling from a figure shared in the introduction entitled “Comparative diversity of animal, plant and microbial species.” 1. For every plant species, there are about 22 animal species—I definitely thought that ratio ran the other way around 2. For every animal species, there are 100k+ microbial species, which is nearly the entire number of plant species on earth! I’m simultaneously struck by the imperative to protect the complex life forms we share this planet with who are not nearly as numerous as I previously thought (especially plants!) and also by the realization that we have only begun to scratch the surface of understanding the vastness of microbial life. Both of these thoughts make me even more excited about the potential of synthetic biology and biomanufacturing.

In my research article, I discuss microplastics and their unexpected existence in animal feed. Through intensive study and analysis of scientific literature like the National Library of Medicine, I explored the potential health impacts of microplastics on the human body. I also had the honor of speaking with Metabolic Engineer specialists Professor Nathan Crook who along side PhD candidate Tianyu Li who have found a genius solution to reducing microplastic pollution.
