How is our Prosecco made? We begin in the hills of Conegliano Valdobbiadene where La Reggenza winery harvest the Glera grapes used to make the sparkling wine (the winery's Prosecco Rosé is made from 90% Glera and 10% Pinot Nero). The selected grapes then undergo a light pressing in order to extract free run (juice that runs freely from the grape and has the higest concentration of acid, sugar and flavour) before passing on to the vinification phase. The grapes are fermented twice, using the Martinotti-Charmat method during the second fermentation. The sparkling process, as it is otherwise known, makes the difference in producing high quality wines. Finally the Prosecco is beautifully bottled and sent across the globe waiting to be popped open by you at home. Here is what 2022 Rhone is like compared to 2021: 2022 Rhone is generous and fleshy, with most wines released already drinking well. However, their flavors and tannins are often less interesting, holding the wine together well but not adding as much interest as they did in 2019 and 2020, or even in successful 2021s. Some winemakers suggested the reason is that the grapes had enough sugar ripeness to make full-bodied wines but struggled to reach the aromatic and tannin ripeness that results in exciting wines. Its silly season and that means popping corks! Most Australian sparkling wine consists of Chardonnay and Pinot Noir grapes, with the most common style a blend of the two. Australian grape growers pick cool-climate Chardonnay fruit early to retain its high acidity levels before it’s too ripe and acidity levels decrease. Some winemakers also make single-variety (100%) sparkling Chardonnays, known as Blanc de Blancs (French for ‘white of whites’). Australian Blanc de Blancs tend to be elegant, savoury, floral and dry, with robust acid. Aged Blanc de Blancs – like all sparkling wines that have spent extended time on lees – can also develop toasty notes. Other winemakers do produce single-variety (100%) sparkling Pinot Noirs, known as Blanc de Noirs (French for ‘white of blacks’, or white wine made from red grapes).
