“Hard work should be rewarded by good food.” — Ken Follet It really breaks my heart to see so many #restaurants continue to #shutter. The ones I’m really gonna miss from this list are Brera and Atrium. My former career was in hospitality for 18 years. I studied it at the Collins College of Hospitality Management. I am a huge foodie, love to garden and still passionate about the industry. But when the #pandemic happened I like so many, was laid off. I was first destroyed by this. It was the only thing I ever did and the first time I was ever laid off. At the same time It was a relief to me as I already knew how hard this would impact the #industry because it was already a business model operating on high labor and low profits. But being laid off was also a moment in my life where I saw an opportunity during this hardship. It was the first time I had the luxury of time on my hands. So I started my own #professionalorganizing business and changed my careers to a #designconsultant. These 2 new professions only complimented what I did for the last 18 years- cater to my clients in a hospitable and professional way. Organize and design spaces in their homes that made their lives more joyful. So I was excited to start a new chapter. Fast forward to today, I see how much #corporategreed and soaring #costofliving in #losangeles is truly hurting the chefs, restaurateurs and all the hourly staff ?? I know this job was already hard, but now if you work in #hospitality you are definitely working 10xs harder due to all the labor cuts… ?? #mentalhealth #divorce #anxiety #substanceabuse #highturnoverrates are even worse I’m sure. Personally, I used to go out to a new bar or restaurant once a week, it was a hobby (since I am “retired”) but now it’s simply not fiscally possible for me to support these local businesses like I loved to do. I now cook 80% of the time, rarely order out and maybe dine out once a month. But at least I still try out new coffee shops when I drive to my client consults. I wish I could do more to help them keep their doors open, but I have to take care of my own family and household now. In the end, I do hope we see a major restructuring of this industry…. It doesn't have to be this way??? The word is PROUD, not SILLY.??? Or excited, happy, hopeful, forward thinking, constantly growing, kicking ass, delighted, ecstatic... This particular guy had left a 4 career in home health care to return to the industry.??? "Why" I asked? "So many reasons!" he excitedly started listing off with big bright eyes! - More money - Easier path to management - Better schedule - Learning every day - Way more fun - Help so many people at once - New adventure every day But he seemed shy about the fact he left a "real job" to come back to working in a restaurant.?? Are you kidding me? Hospitality is the REALEST job of all.?? - People skills - Management skills - Finance skills - Negotiation skills - Budgeting skills - Training skills - Marketing skills - Community involvement skills - Entertaining skills - Creative skills - Menu knowledge skills - Multi tasking skills And he is right where he needs to be! For his personal and career growth. But also for me, and all the other guests he impacts daily. Excelling in his role, delighting guests, growing everyday and the future is beyond bright for him! I started my career in my parents' bar as a kitchen chef. Here's how I pivoted to design. Working in the kitchen was tough. I loved cooking, but I knew it wasn't my passion. I always had a love for design. So, I decided to take a big risk and change my career. Leaving the bar was scary. There was a big chance I wouldn't have clients or money. But I felt I had to follow my heart. The transition wasn't easy. I faced many challenges, like finding clients and proving myself in a new field. But I kept pushing forward. Turns out, hard work pays off. I started getting small projects. Each project helped me learn and grow. Slowly, I built a portfolio and gained more clients. Looking back, that decision to pivot was one of the best I've ever made. It taught me that taking risks can lead to great rewards. FANTASY JOB #2: CAFé RUNNER Look, as much maligned as the service industry is these days (and not without good reason), I do think about this a lot. I’m probably romanticizing it a bit much, but this is a fantasy anyway, so hopefully I can be excused for that. I don’t want to cook, and I don’t need to own the café, but I’d love to take over the day-to-day operations. I think the appeal for me is the opportunity to create a space where people can come and unwind, where I’m given an opportunity to serve them, and both parties can come away feeling a little lighter. Sure, there will be difficult customers, but that’s just another opportunity to work on myself. This would only work in a small town though. Cities tend to separate us too much. There’s too many narratives going on. Fierce competition, urban degradation, Instagrammable aesthetic for its own sake, underpaid staff that understandably won’t buy into the vision, and patrons that are too wrapped in their own games to see it as more than just another place (I’ve been there myself, many times). Plus, my cleanliness OCD can shine. Just imagining wiping down tables, and windows, and stove tops makes me tingle. And all of it in the service of the customers. Yeah, I want it to be a space for the community where they can find themselves at home. Come on down and have a bite to eat, a sugary pastry, and coffee fresh off the boil with one of those cream patterns shaken lovingly on to it. Which means, of course, that it’s not just about the walls and fixtures, but the vibe I bring to the place. That’s 90% of the job. I guess that’s what attracts me most about it. A chance to grow into a person that creates a space that people, sometimes even strangers, want to come into for a while. #dreamjob #fantasyjob #cafe

Well, our Head of Commercial Finance, Ryan Quincey can tell you exactly how many we've sold - numbers are his forte (and he's a pretty awesome chef too)! ?? Q. What was your first job? A. My first job was as a Kitchen Hand in a Fish and Chip shop at 14 and have been in Hospitality ever since. Q. What made you join Bill's? A. I actually joined Bill’s as I wanted evenings free to Study, and as Bills was pretty much the only all-day dining location in Worcester, I applied to be a Breakfast Chef. Q. How do you motivate yourself every day? A. As anyone that knows me will tell you, it’s Numbers! Sales numbers, mystery guest numbers, budget numbers, staff retention numbers – any kind of number that I can use to tell the story of Bill’s and help shape and grow the business. Q. What makes you happy at work? A. Making a difference at site level.?Ever since I moved from the Kitchen to the Office I have always maintained that what was most important at site level (the team and our guests) would shape everything I did at Head Office.?If it doesn’t help or benefit the team or the guest, I probably won’t add it to my to do list. Q. What advice would you give someone looking to start or grow their career? A. My advice would be, don’t chase the salary or the job title or even the fancy perks, chase the place or person that makes you feel like you make a difference.?I spent a lot of time working for people and companies that simply weren’t interested in me or my development, no matter what effort I put in.?When I joined Bill’s that changed, I was suddenly surrounded by people who paid attention to the difference I could make to the business, and really cared about developing me as both a person and an employee. Since childhood, I've always had the urge to "fix" things. I used to dismantle my bike, swap the tires with others in my yard, repaint my bikes regularly, add pegs to some, and trade parts with friends in my neighborhood. Years later, with my first car—a Honda Del Sol—I would often keep my dad awake until 5 a.m. working on various non-essential projects which usually caused more stress than benefits. Once I entered the workforce, I quickly noticed that every job I held had its share of significant issues needing resolution. Solving problems in any restaurant I worked in brought me immense satisfaction. I found efficiency in reorganizing kitchens. Chef Taylor, a mentor of mine, advised me that whenever I started a new job as a chef, the first thing I should do was assess the kitchen and rectify anything that didn’t make sense. This meant ensuring ingredients needed throughout the night were kept out of the walk-in cooler, placing seasonings closer to sauté stations, and removing anything that hindered the restaurant's flow. Little did I know, these experiences were building the foundation for my future as a successful consultant. Now, I may not often turn wrenches or sauté vegetables, but I have the privilege of transforming business owners' lives from stressful and chaotic to triumphant and prestigious. What about you? Holidays like Easter are times to be with family. Whether a Director of Sales, Regional VP or SVP of a business unit, I always make an effort to work on holidays when my team has to work. To me, team members are family members. If they can make these sacrifices, so can I. Today, I had the honor or working with my Bluegreen Vacations / Hilton Grand Vacations #MountainLoft team/family in #Gatlinburg! Team members brought in an incredible food spread. Everything from a spiral ham to my Easter Bunny cake wearing the #TNVOL orange tie, that didn’t seem to help against Purdue. The message from this post is for anyone in business. Whether you own a business or are a leader of a gas station, hotel, hospital, restaurant, theme park or vacation ownership resort, it’s paramount you understand the sacrifices your team members make on special occasions like holidays or other family functions. We must build and participate in a #culture that recognizes them for preventing business interruptions servicing your guests/clients during important traditional family days. Once arriving home, I took time to text and/or call my leaders across different states that were away from their immediate family most of the day and also at the office with their work family, as I could not be at every distribution center throughout the Midwest.
