A $10,000 Members-Only Sushi Restaurant Is Coming to Miami A (Article from BusinessWeek) The owner of Sushi Namba is bypassing New York and going directly to Florida. Interesting insights into a $10,000 members only concept and the reason behind it: "In summer 2024, the Tcherassi brothers and Namba will open the multiconcept?Ura, a 1,700-square-foot space that includes Sushi Namba and the Listening Room, a jazz lounge that will also host Cocktailante Oboro. Ura will be located in a gated building in Allapattah, an up-and-coming artistic neighborhood northwest of downtown Miami. To eat at Sushi Namba and drink at Listening Room, Miami residents will first have to pay a $10,000 members fee This will give them access to monthly seats at the sushi counter, as well as to the bar and jazz lounge. The price for an actual meal of sushi omakase will range from $400 to $500 per person. The Tcherassi brothers say that they will cap the number of members at around 300 and have started accepting members. The eye-opening fee will not make Sushi Namba the first $10,000 members-only Japanese spot in Miami, though. Major Food Group (MFG) already operates ZZ’s Club there, with its $10,000 initiation fee and $3,500 annual membership. (Namba will not require annual membership.) The trend toward private restaurants and bars is taking off in the US. In October, MFG announced the?New York launch of ZZ’s Club?at a cost of $30,000 for new members;?earlier this year, New York became home to the referral-only whiskey den, Beatbox. Sayori, Japanese halfbeak sushi, is likely to appear on Sushi Namba’s menu in Miami.Source: Ura Members-only dining and drinking spots are well established in Japan, as are referral spots where a prospective diner needs to be accompanied by a member or obtain a referral from a regular. John Hirai, a top reviewer for the Japan-based restaurant rating site?Tabelog, said that by choosing their customers, operators can better control the dining experience. For in-demand restaurants with just eight or so seats, “chefs want customers who will repeatedly visit, respect [them], respect other customers, and various other factors depending on the chef,” he noted. The Tcherassi brothers agree. They say that opening an expensive members-only place brings guests a better experience. Once Namba comes to know customers, he can customize their experience—a common practice in Japan. At its pinnacle you get to the plutocrat excesses of the high-end sushi counter where no cooking may be involved at all, but prices can be scorching deep, smoking holes in any hopes you had for your family’s future. It doesn’t take massive insight to understand why this might be. If you are doing very little to an ingredient, it has to be the best possible, because there is nowhere to hide. on the right, stefan stiller, a german chef whose restaurants in china have a combined six Michelin stars. on the left, xiao jun (肖骏), a shanghainese chef whose crab soup dumpling restaurant, lai lai xiaolong (莱莱小笼), is an institution. (xiao jun’s son, an aspiring chef, is in the middle.) their restaurants are just a few kilometers away from each other but in different universes. at stiller’s three-star restaurant, taian table, the tasting menu changes every six to eight weeks and costs more than 2,500 RMB ($340). at lai lai, the menu hasn’t changed much in the last 30 years; eight crab-and-pork dumplings are 46 RMB ($6). taian table requires a reservation, often several weeks in advance. lai lai is walk-in only and has a constant line out the door. but to me they share the same spirit. they are both fastidious about their sourcing and ingredients. taian table has 22 cooks and chefs for their 28 seats in the dining room. lai lai has 50+ full-time workers in their crab factory, picking and processing crab for their two restaurants. until this weekend, neither knew about the other. so i fixed that. stefan and i went for lunch on saturday, and xiao jun brought one of everything to the table for us to try. afterwards, i translated as they discussed their respective restaurants and experience, and made tentative plans to meet again in the kitchen. maybe something will come of this; maybe it won’t. i don’t know. but it felt important to me to introduce these two distinct worlds i travel in, and see what happens. this picture could be just a souvenir of a dumpling lunch. or, it could be the start of something really interesting.????
