This week’s #TechnicalTuesday dives into the Falling Number Test, essential for measuring alpha-amylase enzyme activity in wheat flour. ? Here's a quick rundown: ? What is it? A glass tube with a flour-water mix is heated. During this starch thickening process, alpha-amylase enzymes break down the starch. If a lot of enzyme is present, the starch breaks down quickly, resulting in a less thick mixture. The plunger drops faster, giving a low falling number. Conversely, less enzyme activity results in a thicker mixture and a higher falling number. ? Ideal Falling Number: For bakeries and millers, the sweet spot is 250 - 350 seconds. ? Why it Matters: Quality Control: Ensures optimal enzyme activity. Dough Consistency: Achieves perfect texture and volume. Shelf Life: Identifies high enzyme activity that could degrade dough.
