??What implications could the common heuristic that "processed foods are unhealthy" have for the protein shift, where consumers in WEIRD countries are being encouraged to replace meat and other animal products with plant proteins (including plant-based analogues which are typically classified as ultraprocessed) for health and sustainability reasons? In our latest article, we explored this heuristic among Swedish adult consumers and found that: ?? The belief that "processed foods are unhealthy" was a strong and prevalent effect that is resilient to (at least some forms of) response bias ?? Health perceptions of products based on plants and seafood were penalised more for an apparent increase in processing than products based on meat and dairy ? the heuristic was not applied equally across food categories. ?? The heuristic was stronger among women and positively associated with food technology neophobia (a distrust of foods made using novel technologies) ?? Health perceptions largely align with Nutri-Score, but there were notable exceptions... ?? That raw materials associated with health - plants and seafood - are more difficult for consumers to accept in processed form (from canning to chemical processing) carries clear implications for communication and marketing of these products ?? The meeting of experimental psychology, sensory and consumer science, and advanced statistical modelling in this work are a true showcase of how simple yet powerful design can reveal the complex associations consumers have with different categories of foods.
