While we often focus on food safety regulations and hygiene practices, we must also prioritize protecting our products from intentional contamination. Food defense involves strategies to safeguard our food supply from malicious acts, whether from tampering, sabotage, or terrorism. Here are some key steps to enhance our food defense: Risk Assessment: Regularly evaluate vulnerabilities in your processes and facilities. Identify critical points that could be targeted. Employee Training: Educate staff on recognizing suspicious behavior and the importance of reporting it. Everyone plays a role in defense! Access Control: Implement strict access controls in production areas and storage facilities. Only authorized personnel should be allowed. According to FSSC 22000 V.6.0 Additional Requirements Clause 2.5.3: FOOD DEFENSE Food Defense refers to the measures taken to protect food products from intentional contamination or tampering by individuals with malicious intent. This includes assessing risks and implementing strategies to prevent, detect, and respond to such threats. The focus is on ensuring the security of the food supply chain from intentional harm that could compromise food safety. Food Defense generally require a wider range of employee and other stakeholders involvement. To ensure food security and defense: - Threat Assessment (clause 2.5.3.1) must be conducted which involves the organization: ? Conducting and documenting the food threat assessment, based on a defined methodology, to identify and evaluate potential threats linked to the process and products within the scope of the organisation. ? Developing and implementing appropriate mitigation measures for significant threats. - Plan (clause 2.5.3.2) ? The organization has to document food defence plan specifying the mitigation measures and verification procedures. ? These plan should compile with applicable legislation, cover the process and products within the scope of the organisation and be kept up to date.

To mitigate threats in food establishments, you have to conducts vulnerability assessments (VA) on food systems to identify, quantify and prioritize (or rank) vulnerabilities in a system. Here are some effective tools to facilitate this process: ???? The Key Activity Type (KAT) method is popular approach in USA for assessing food defense vulnerabilities against intentional adulteration. It focuses on four high-risk processes: 1- Coating/Mixing/Grinding/Rework 2- Ingredient Staging/Prep/Addition 3- Liquid Receiving/Loading 4- Liquid Storage/Holding/Surge Tanks These activities are consistently identified as vulnerable, regardless of the specific food commodity. ???? Three element method is little more complex than KAT method. However, using this method will allow you to take a deeper dive into your risk assessment for each process under evaluation. To do this, team will need to assess vulnerability by evaluating following three elements for each step: 1. The public health impact. 2- The degree of physical access to product. 3- The ability of attacker to successfully adulterate product. ???? TACCP method builds upon existing processes of HACCP and use same methodology to identify, assess, and control threats in food establishment. #fooddefense
