?? What could I learn from a chef?????? ?? This is what I was thinking going into our latest interview for The Quest for Success??? We had the privilege of sitting down with Big Sam Young, the mastermind chef behind S’more, one of Sydney’s most talked-about restaurants. Whilst I am also trying to build a business, I wasn't sure if anything from the hospitality industry would relate to me. But as always, I was wrong. Sam’s story is nothing short of inspiring. Food Stars S2 premiered 2 weeks ago with a completely revamped format. Here's why it's 10x better ?? For some background, I was one of 15 contestants on S1 of Gordon Ramsay's Food Stars. We competed through weekly challenges to show off our "business skills" and ultimately convince Gordon to invest in our businesses. Unfortunately, I was eliminated in E3 when my wine brand was deemed "too Silicon Valley, not Napa Valley." Here's where last season fell short: 1. One team: we all competed under Gordon's umbrella – making him the single decision maker of who moved on. 2. Founder spotlight (or lack thereof): most contestants got 10-15 seconds of time to explain their business. And for most of us, including myself, this only aired several episodes into the show! Audience members want to have an opinion on your business – just like in Shark Tank – right from the beginning. Pitching is everything! 3. Food-focused: S1 felt a lot more like Hell's Kitchen with inexperienced chefs (aka me) rather than Apprentice with food entrepreneurs. After watching the first episode of season 2, it's clear they learned from the above. This season: 1. Teams: They broke up the contestants into 2 teams between Gordon and Lisa Vanderpump. 2. Pitching intros: E1 solely consisted of contestants pitching. YES! This was the key to success. Get the audience involved with the contestants and their businesses ASAP. We are all sharks in the audience now. 3. Business challenges: Although it's still early, we are already seeing signs of greater business-focused tasks. I'm excited to see how competition between the two sides spurs even more! I'm beyond grateful for my experience on S1 of Food Stars. But I'm even more excited to see the steps forward they've taken to highlight the founders & their incredible products in S2. ?? Great Brands are all ?? Every brand starts with a passionate individual and big idea. It is that simple, but sadly over time, the complication and distraction of day to day operations, financial pressures, and a desire to grow, may result in that original dream becoming blurred and the brand 'superpower' is lost in the land of mediocre - the mass; the sea of beige! I recently listened to a podcast featuring Nick Palumbo the founder of the fabulous Messina Gelato. Nick was passionate about taking his career in hospitality (not a chef) and creating a niche he could own. His family were from Messina in Italy and his grandpa much to the delight of a 7yr old Nick, served him a sweet strawberry granita for breakfast one morning.....the rest is history. ?? The queues and hype around Messina outweighed its financial success in the early days but Nick stuck to his vision refusing to compromise on the non-negotiables: - Every flavour is made using a unique recipe created by us. - We never, ever use pre-made bases or mass-produced flavour pastes. - We are obsessed with the quality of the gelato and he origin of the ingredients. - So much so that we even have our own dairy farm that supplies us with super creamy jersey milk They do not compromise - EVER! Many businesses complicate and over intellectualise the notion of brand and vision and this does not work - the business, its heartbeat and culture very quickly becomes robotic. This is why when I start working with my clients, the first stage is a deep dive into the why, the story and superpower of the brand. From there, we do the wok and create the long term and short term plans with that vision firmly planted at the centre.
