?? The current global shortage of cocoa highlights just how fragile the food industry is in the face of climate change. A new startup from the Wyss found a solution in an unusual place: bacteria. ?? Circe Bioscience has used genetically engineered microbes to produce cocoa butter in the lab that’s identical to the real stuff. ?? But they’re not stopping at chocolate. Circe’s technology has the potential to produce sugars, fats, biodegradable plastics, and biofuels - all using only CO2, water, and electricity as inputs.
