Does innovation really pay off? We made up the business model for our restaurant. It goes like this: Every month (or two), we replace our guest chef. We coach them through designing their menu, and then launch their concept, like a pop-up… that lasts for a month and functions like a full scale restaurant. Pop-ups aren’t new, of course. But a restaurant that runs exclusively as a back-to-back stream of pop-ups? We couldn’t see anyone doing it. Total transparency: there is SO much legwork behind the scenes. Every time we change chefs, we retrain the staff. Reprogram the till. Reprint the menus. We taste and photograph the full offering. We find some new suppliers. We redo our Safer Food Better Business. It is a LOT of work... (which my husband manages heroically!) But then… we get a little recognition, like this OpenTable Diners’ Choice award. Less than six months after opening into a seriously challenging hospitality climate, with zero restaurant managerial experience... ?? ?? And we feel the rewards of daring to be different. When we were thinking about wine by the glass (and carafe), and I suddenly realised that Laylo did trade, it was the most obvious fit. Because Laylo is a different way of doing things. An innovative one. One whose rewards we are reaping. This isn’t a deep dive into the mechanics of running a restaurant, or using Laylo in it. This is just little me, on Monday morning, flying the flag for innovation.
