And that's mostly to save space and reduce complexity because most servers run without a desktop. Many servers of all sorts run headless, meaning they run without a display attached and are used remotely across the network through web services, Secure Shell, or through other networks services like file sharing. Sometimes though it can be useful to have a desktop environment running on the server, in case it needs to be used directly or in case it needs to perform tasks that are only possible or are significantly easier to do when using a graphical environment.
