Executive Chef
Company Overview: Hyatt Regency Green Bay is seeking an Executive Chef. Did you know we are located in the heart of downtown and home of the Green Bay Packers? We are the largest, full-service hotel in the market with 241 all-suite guest rooms and 80,000 square feet of space.

Position Summary: The Executive Chef will be responsible for all kitchen operations including menu planning, provisioning, food preparation, and sanitation. The Executive Chef will be highly visible in the Culinary Operation and will engage with preparing and cooking foods to ensure an efficient and profitable food service department is being managed. The position demands creativity on a daily basis, excellent communication skills, and the ability to maintain the highest of culinary standards. The Executive Chef works well under pressure, is organized, flexible, self-motivated, and is willing to work long hours.
Detailed Description:
- Plan, direct, and supervise food preparation and cooking activities.
- Instill proper safety and sanitation of all kitchen facilities and equipment.
- Ensure that level of quality, portion control, and plate presentation is adhered to consistently.
- Contribute in determining how food should be presented and create decorative food displays.
- Develop and implement creative menu items that adhere to Hyatt brand standards.
- Analyze recipes to assign prices to menu items, based on food, labor, and overhead costs.
- Assist in planning, coordinating, and implementing special events and holiday functions.
- Monitor food production, ordering, cost, and quality and consistency on a daily basis.
- Check the quantity and quality of received products.
- Manage hourly culinary colleagues through scheduling, training, coaching, evaluating and hiring.
- Coach the team towards achieving exceptional guest service and employee satisfaction results.
- Teach colleagues the importance of consistency in preparation and presentation.
- Implement and maintain quality standards.
- Abide by all organizational policies and procedures.

Qualifications
- Demonstrated ability to effectively interact with people of diverse socioeconomic, cultural, disability, and ethnic backgrounds
- At least 6 years’ or more of progressive hotel Culinary experience (preferably with Hyatt)
- Opening hotels, previous hotel pre-opening experience preferred
- Service oriented style with professional presentations skills
- At least 4 years’ experience in a senior role in a culinary environment
- Proven leadership skills
- Must possess the following strengths: motivational leader, proven track record in high volume property, effective in providing exceptional customer service and colleague relations, and the ability to improve the bottom line
- Clear concise written and verbal communication skills in English
- Must be proficient in Microsoft Word and Excel
- Must have excellent organizational, interpersonal and administrative skills
- Coach and counsel employees to reflect Hyatt Service Standards and Procedures
- Accountability and training for all staff
