Yali Biosciences is building a biotechnology platform for fats & lipids, a critical ingredient for nutrition, taste and texture. The company is focusing on structuring fats that emulate butterfat for applications in plant-based dairy and confectionery markets, and nutritional lipids that is bio-identical to human breast milk fats. Our planet is overwhelmed by 7 billion people, 25 billion chickens, 980 million cows, 680 million pigs, to name a few. Concentrated animal farming caused devastating deforestation and natural resource challenges. Extreme weather patterns and a hotter planet are rapidly stressing the food supply chain and planetary health, it is time to create a climate-smart food system, and we start with fats & lipids.

We were so pleased to exhibit our cocoa-free butter, made with precision fermentation, at the Bezos Centre Scientific Kick-Off Event in London (Bezos Centre for Sustainable Protein - Imperial) last week! Up to 50% of a dark chocolate bar is cocoa butter, that makes it melts perfectly in your mouth. However, the cocoa supply chain is structurally stressed due to climate change. “Silicon Valley has been a transformative chapter of my life!” Those are the words of Olivia Adrover, who along with five other talented Danish students have been on a unique journey during Spring 2024 working at bioinnovation startups in Silicon Valley. This week, we celebrated graduation of our International Bioinnovation Program Scholars: Cristina-Genoveva Bodnari, Javier Lopez Bort, Emma Cathrine Liisborg Leschly, Mette B?ge Pedersen, Olivia Adrover, and Kasper Krunderup Jakobsen ? After five enlightening months in Silicon Valley, our scholars have completed their journey, working at the startups Modality.AI, Mirvie, Yali Bio, ResVita Bio, Ivy Natal, and Prolific Machines, Inc. They've gained invaluable experience in entrepreneurship and innovation, bridging the gap from lab to market. To celebrate, we held an event to mark their achievements and the incredible journey they've been on. During the event, the scholars had a chance to present their learnings and receive feedback from Managing Partner at SV Venture Group, Jordan Wahbeh, and Senior Advisor at Innovation Centre Denmark Silicon Valley, Jon Therkildsen - thank you both for sharing your expertise! Recapping the experience, Olivia Adrover says: "Over five months, I've learned to bridge the gap from lab to market, fundamentally changing my approach to work and life. This journey has sparked a passion for innovation and a commitment to living with purpose and impact. Here's to shaping the future and making a difference!"
