Honoring and celebrating whole plants and all they offer from a taste, health, and ecological standpoint, is born from the wisdom of grandmothers like mine, from Dan Buettner's Blue Zones studies of the people who live to 100, and from visionaries like Chef Dan Barber. And to me, the most exciting part is that this 'trend' signals that we as a society, are forming a deeper, more positive relationship with food and where it comes from. Not diet culture.
