Komé Collective, Vine Connections sake division, is proud to announce the recent carbon neutral certification of its Kojima Sohonten brewery. The brewery's efforts balance emitting carbon and absorbing carbon from the atmosphere. The electricity used for production is 100% recycled renewable energy that utilizes sake lees for power generation. The brewery is only the second carbon neutral brewery in Japan to achieve this and the first one to be an all-Junmai brewery. Kojima-san, the 24th generation brewery president, recently sat down with us to share more about how climate change is affecting rice production and the sake breweries’ bottom line, the reasons to go carbon neutral, and the innovative practice of using sake kasu to produce renewable energy.
