Over the next few months, we will highlight our amazing Just Cut farmers, who make production possible each day. Just Cut purchases locally grown vegetables and prepares a line of ready-to-use products for K-12 schools, hospitals, and colleges throughout Vermont and just over the border in New Hampshire. Sparrow Arc Farm has been growing for Just Cut since 2020 and has been an integral addition to our farm sourcing. In 2024, Just Cut purchased 70,000 pounds of chef white, gold, and yellow potatoes from Sparrow Arc Farm that were diced and sold to customers such as Orleans Southwest Supervisory Union schools , UVM Dining, Dartmouth Health, Dartmouth Dining, Norwich University, and others. Growing specialty potatoes for Just Cut, the Vermont Food Bank and markets across New England. They do not use neonicotinoids or herbicide, and follow a 3 year crop rotation, only growing potatoes once every 3 years on the same piece of ground. “I think the cool thing about Just Cut for most Vermont growers is they can take volume at a scale that most market gardens that direct market their stuff don’t usually see. And I think that’s a real niche and a real need.
