Traceability: the Magic Key for Decoding Food Safety Mysteries? Author: Aly El Sheikha As reported by WHO (2023) one in 10 people in the world (600 million people) fall sick after eating contaminated food and 420,000 die every year. Economically, $110 billion is lost annually in productivity and medical expenses as a result of unsafe food in low- and middle-income countries.? Hence, the urgent question comes to mind ... why traceability is important? This question will open the avenues for three novel directions: 1) Safety and Quality Direction: Traceability has recently become the most important component of food safety, while food safety has evolved as a prime indication of quality. Figure 1 illustrates the relationship between food safety and traceability. 2) Reality of Current Traceability Technologies: Software and documentation tools are gaining much interest, especially for those within retail, as they also act as a means of communication between facilities and businesses. However, these tools remain informational only and do not touch the ‘reality’; consequently, they are not currently sufficient or sophisticated enough to provide an effective means of tracking that meets the needs of consumers. 3) What is the Goal and How Can We Achieve It?? - The ultimate goal is to provide consumers with a food product that is safe, healthy, and good quality at an acceptable price. - Are microbial community compositions inferring in the history of food? The microflora of foodstuffs is closely related to the place of growth, fishing, process, and/or manufacture. Molecular biology techniques are well-established tools in environmental microbiology, which allow for the study of the complexity and behavior of microbial ecology. Previous studies have proven the efficiency and potency of using molecular biology technologies as tools for tracking by providing unique biological barcodes and evaluating the safety and quality of a wide range of foods, i.e., marine salt, fish, cheese, fruits, cocoa, coffee, and many more.
