  • Yesterday, we had the privilege of hearing from three extraordinary chefs: Chef Payson Stultz – CDC of Lilia, Chef Gabrielle Hamilton – Chef & Owner of Prune and author, and Chef Amanda Cohen – Chef & Owner of Dirt Candy. As part of our leadership cohort, which began with FOH leaders and has expanded to include BOH leaders from across USHG, we gather monthly to develop our leadership skills and learn from industry experts and our talented team. Led by Chef Hillary Sterling, the conversation centered on what it takes to define your own leadership and culinary style, the realities of launching and running a business, and how to foster an inspiring and inclusive kitchen culture. A huge thank you to Payson, Gabrielle, and Amanda for taking the time to share their journeys and expertise with us. Their words sparked meaningful conversations that will stay with us long after this session.

    Real Estate & New Business at USHG

    Opening restaurants is HARD. Trying to do so in the heart of Rockefeller Center during peak holiday season is an intimidating task. Making this happen without the team assembled by Zachary Koff & Joseph L Tarasco would've been impossible. The 7th unit for Daily Provisions and our last opening of the year is a special one for me, as it was the first one I saw fully come together from start to finish since joining Union Square Hospitality Group back in July 2023. It started with Jacqueline Klinger, Ian Rice, & Graci Goldstein showing us this space that same summer. It was one of those situations where you immediately know this could be something special. Reed Zukerman and the team over at Tishman Speyer were also a pleasure to work with during lease negotiation, and I can’t say enough wonderful things about this group. Max Welch, Corey Gargiulo, and a slew of architects, designers, engineers, and contractors built this in record time, putting together one of the most impressive kitchens and dining rooms in midtown this year. Ivory McKay took the ball last Monday and has had the place rocking non-stop since. I’ll admit – it’s not the easiest to navigate through Rock Center these next two weeks. But, if you do find yourself over there and are in need of some good eats, a place to recharge, or just a spot to feel welcome, I can assure you the all-day neighborhood café next to the rink is the place to check out.
