Production of Plant-Based ?? Products: The Future of Food? The increasing demand for sustainable and healthy food alternatives has pushed the plant-based product market toward new horizons. But how exactly are these foods produced? Plant-based products are made entirely from plant-based ingredients. Some of them mimic the texture, taste, and appearance of animal products, but without any meat, dairy, or eggs. ?? The Production Process: It all starts with the selection of raw materials, where plant proteins such as soy, peas, or lentils, along with other vegetable ingredients, are chosen and prepared. They are then mixed according to specific recipes and formulations to ensure the right balance of flavors and texture. In many recipes, extrusion of the product is foreseen. This process transforms the proteins to mimic the desired texture. The product is then seasoned and shaped to recreate the appearance of traditional products and, if necessary, cooked. A crucial step to enhance the aromatic profile and promote the natural preservation of the product is fermentation. During this process, the compound ferments for a period ranging from 24 to 72 hours, at temperatures between 30 and 40 degrees Celsius. Finally, a cooling phase ensures the stability of the final product, which is brought to the ideal storage temperature. ?? Necessary Equipment: The process requires advanced facilities, such as fermentation chambers, where temperature, timing, and humidity control is meticulous; cooking and cooling chambers; and clean rooms for safe slicing and packaging. ??
