With the weather being so nice in Denver, I decided to get out of the house to grab lunch today. I took a ride over to Toro Food Concepts for the San Juan Burrito! Juicy pork pernil, rice and beans, sweet plantains and mojo... yum! I definitely did not leave hungry! Loving all kinds of fusion or "chaos cuisine" right now and this place runs the gauntlet!

So this happened… Thanks Molly Martin and Denver Westword for sharing our story. Some may say that starting an independent restaurant in this economy is lunacy, but going after your dreams is seldom perfectly timed or convenient. The amazing #Denver community shows us, time and time again, that they will answer invitations to get connected and rally for one another. The lesson - stop using social media to only show your aspirational, perfect moments. We know that ruins the mental health of many, in particular our youth. Share your story, including when things are not rosy, and especially when you need help. Your neighbors care about you. We would like to share this flash of algorithmic notoriety with the community of independent restaurants in Denver. Let’s keep our vibrant food industry busy and thriving. Every one of us has an amazing story of why we do this crazy work - share it, even if it’s not always successful or pretty. Someday we’ll tell the story of when our little restaurant went #TikTok viral. We’ve all seen it happen from a distant, on social media and the news, but little can prepare you for what actually happens when you hit the algorithm’s jackpot. Scary, bewildering, surreal, chaotic, magic. When we’re out of the chaos, we may write a blog post. Too soon to tell what the real-life implications will be after such an event. Until then, we are just grateful for Denver’s amazing community and that crazy media unicorn called TikTok. #denver #denvercolorado
